quick meals

Simple burrito. Rice, refried beans from Viva Vegan,  shredded lettace and a leftover pepperoni style slice. Mmm nice gooey beans.

5 minute peanut noodles and slaw. Peanut sauce made in the jar using dregs of my peanut butter. The slaw makes a nice addition to a meal in a hurry, just shredded cabbage and carrot mixed with a few spoons of rice wine vinegar and a little salt. Would prob be better left to mellow out (dude) but I only made my mine 10mins before.

Not a quick meal (unless you’ve already got dough made, in which case hell yeah 15 mins), but what I’ve really been loving past few days is pizzaaaa. But my pics have been terrible, even for me. Here’s one anyway.

Spinach, corn, sauteed onion+pepper+garlic, “pepperoni”, mozzarella cheesly. Mmmmm, so so SO good. Had one the day before that which was pretty similar but with jalapenos and cherry tomatoes. In heaven I’ll have pizza for every meal.



burger quest

For the next issue of my stupid zine I thought I’d do burger reviews. Here’s the first round. Fry’s and Sainsbury’s basics.

I won’t do a full reviw here… Fry’s – really tasty, practically exactly the same as their chunky strips though. Cooking issues, cook through fine but just stay an unappetising grey when ovened. Frying, started to brown but still big grey bits, ended up slightly burning em by waiting for the rest to brown. Sainsbo’s – what you’d expect really, potato, corn, green bean. Overpowerd in a bun with trimmings but actually surprisingly nice on its own.

Speaking of the chunky strips, here’s a wrap with them in a jerk sauce, with onion, pepper and spinach. Takes 5 minutes to throw together and super tasty.

On tuesday went out with the Bab’s family, had a nice olive tapenade, roasted pepper, and tomato panini (no pics, don’t wanna weird em out too much yet). Summat mustn’t have sat right though cos next morning I was vomming! Nasty, but anyway once felt like trying food again made a much edited version of the chickpea noodle soup from Veganomicon. Don’t think I can comment on real recipe since I didn’t have mushrooms, miso (used some soy and hendo’s instead) or the right noodles.

Not very attractive but very tasty. Comforting and kinda bland in a nice way. I ate 3 big bowls. Not summat you’d make for friends but good simple feel better food. Really quick (I didn’t cook as long as the recipe said since my noodles were instant) and cheap too!

I bought the book In Search Of The Lost Taste about a year ago (mostly cos of the AMAZING cover) but had only really tried 1 recipe. Alot of them are pretty weird, and buying all the ingredients seems like a bit of a gamble. So I searched through in hope of finding summat I had the ingredients for and found the “green bread”. Was pretty nice and went well with the leftovers I have.

Hopefully I’ll get round to another recipe before next year…

On sunday my mum gave me some blackberries from her allotment so of course instead of just eating them I had to turn them into something unhealthy. This was my first go at “coffee cake” so not sure if it was right or not. I took it out abit early cos the top seemed about to burn, so was a little underdone in the middle. I’ll just pretend it was meant to be that moist. Really tasty though, could’ve eaten it all in one go, thankfully I didn’t. Based on this recipe from It Ain’t Meat Babe. Which is also where I got…

an awesome bacon tofu recipe! I added smoked paprika too for a bit more smokiness. So awesome! Seriously, for one cheap block of tofu you can have about 6 sandwiches worth of tasty tasty facon. So much better than the 3quid odd packs of branded stuff. So we had TLTs for (past midday) breakfast while watching big brother winner Come Dine With Me (half hillarious, half gross). Perfect!

Nice lunch of tabboleh and spinach. Makes a change from my usual friedness.

Thats more like it! Chile cornmeal crusted tofu from Veganomicon, very nice! Will have to make another batch and try the po boys. With potato salad and corn ont cob.
