End of MoFo!

So its come to an end! And I failed miserably at posting every day, although this will be my 21st, so its an improvement on my usual update ratio. I didn’t manage to stick with any of the themes I had, or in most cases even attempt them. And at the moment I’m having a total cooking block, I try and think what I want to cook/eat and just don’t know. Usually I’m wishing there were more meals in the day so I could try more things out, so this is weird. Maybe its just me being myself, if there’s something I should be doing, I suddenly don’t want to. Or maybe its the fact that my shared kitchen pisses me off big time, and that its snowing.

Anyway I’ll finish on a “too cold to go to the shop but want to eat” fried rice.

Well done to everyone who’s been MoFoing, I’ve loved following it!

Vegan MoFo: Cauldron Roast

Its got to that time of year where roast dinners are pretty much the best thing ever. I’ve had it two nights in a row. And could keep on going. For me potatoes and gravy are a must, the rest depends on what I’ve got in/feel like buying.

I decided to give this new Cauldron roast a go since it was on offer (£2.09, still not exactly cheap). Its made with sweet potato and chickpeas, which sounded good to me since I’m really a fan of nut based roasts (I’m sure some are nice, but ones I’ve had made me wanna vom). Verdict – really nice but like a slightly upmarket stuffing mix. Probably wouldn’t bother buying again at full price, but will try and recreate it!

Yeah, I can never get a good roast photo. Cauldron thing, potatoes, sprouts and gravy. I actually licked my plate clean.



Vegan MoFo: Rice Noodle Salad

Again trying to use up ingredients. Still have plenty of fresh coriander left. Any recommendations?

This was done in about 10 minutes and makes a tasty refreshing lunch. I cooked the rice noodles while whipping up a quick peanut sauce (not a large amount, was working with the stuff left at the end of the jar). Then let the noodles cool off in cold water while prepping some veg – spring onion, red onion, salad greens (that i got for 5p saturday night, def not looking their best), fresh coriander, and a thai chili. Mix everything together and top with more coriander. Nom!



Vegan MoFo: Noodle Soup

Another not really blog worthy meal, but at the moment I’ve too many ingredients/leftovers need using to go out and buy more. Maybe if I didn’t have housemates… Oh to have a whole fridge/freezer/kitchen to myself (and Ste, he’s allowed)! But yeah, 3 people who like to eat + one kitchen = not alot of space.

So anyway, this post of Isa’s caught my eye. I had all the ingredients except the mock duck so I thought I’d give it a go without. Don’t know if it was because of the lack of mock duck, or the fact that I halved the recipe (roughly, used a bit more than half when came to spices for broth) but it turned out pretty bland.

Bad steamy photo, but was eating before setting off to work so no time to wait. I ended up stirring in plenty of sambal oelek to make it a bit tastier.



Vegan MoFo: Burger Quest 3

The other day the boy had asked for burger tea, popped into Holland and Barrett and noticed these Redwood Southern Fried Chicken in burger. They’re pricey but I thought I’d give em a go in the name of Burger Quest.

I think this is the first chicken style burger that I’ve had, so that alone made it good. First bite I was thinking what a waste, but by halfway through I didn’t want it to end. Nice “southern fried” style flavour, good texture, cooked well (I ovened them but you can fry or grill). Only complaint is the price – £2.89 for two burgers. I guess still cheaper than buying a burger from a takeout/pub/whatever, but for that price I’d expect them to be bigger, or mind blowing. I might buy them again, but it’d be a treat. Or when he’s not there so I can actually eat two, ha!



Vegan MoFo: No Nutritional Value

Yesterday I had an almighty craving for grilled cheese, so bad that I had to give in. So I bought super melting mozzarella cheesly and rubbish but lovely toastie white bread. I ate three, while watching If You Really Knew Me. I’d never heard of it before, forcing teens to open up to each other and cry, amazing! Super trashy food + super trashy tv = super! My excuse was that I was preparing for my first ever night shift.

Believe it or not, the cut open photos were even worse.



Vegan MoFo: Red Beans with Dominican Style Sazón

We both fancied burritos for tea, so rather than my standard concoction I thought I’d try out some new beans from Viva Vegan. I settled on the red beans with Dominican style sazon since I had 2 peppers needed using and there wasn’t anything too fancy.

Making the sazón was wonderful,  it smells so fresh! I’m sure you could just use it as a salsa like that. Or use it to flavour all your foods ever.

Served with the yellow garlic rice. We actually ate them burrito style along with a creamy cabbage slaw with jalapenos, this is morning after leftovers. Mmm beans for breakfast.
