Vegan MoFo: Rice Noodle Salad

Again trying to use up ingredients. Still have plenty of fresh coriander left. Any recommendations?

This was done in about 10 minutes and makes a tasty refreshing lunch. I cooked the rice noodles while whipping up a quick peanut sauce (not a large amount, was working with the stuff left at the end of the jar). Then let the noodles cool off in cold water while prepping some veg – spring onion, red onion, salad greens (that i got for 5p saturday night, def not looking their best), fresh coriander, and a thai chili. Mix everything together and top with more coriander. Nom!
