Curried Carrot Dip

This isn’t a recipe I would normally choose, but after reading some good things and realising I had the ingredients thought I may as well give it a go. Its nice. Light, sort of creamy, not too in your face with the curryness. Only tried a bit on some (stale) bread so far. Feeling it’d be nice with some roasted broccoli. Mmm.
