Reggae Reggae Sauce

I’m not a massive fan of jarred cooking sauces, in most cases making your own is far cheaper and tastier. But we all feel lazy or uninspired sometimes! I was browsing asda after work one night trying to think what needed using up at home and what I could this 10p bag of spinach for. Thai green curry? No, Ste had that last night. Saag tofu? They’re out of tofu. Getting fed up and hungry I walked past the reggae reggae stuff and thought I’d go with that. (Labeled vegan, nice bonus).

I got the cooking sauce. Fried some fake chicken, onion, ginger, red pepper and sweet potato, added the sauce and let cook covered til potato soft, then mixed in the spinach.

Doesn’t look amazing, but I was very happy with eating it!



Double chocolate walnut cookies

That’s right, more cookies! I had a mixed night on saturday (good gig/bad drunken arguing) so needed to do something nice for myself after work on sunday. What better way than late night baking? I decided on the chocolate chocolate walnut cookies from Veganomicon, since there’s been a bag of walnuts sat on my bookshelf for a while now.

Delicious! Just had one now with cup of coffee (excellent dipped in), trying to resist getting a 2nd… and 3rd.

 



Linzentorte Thumbprints

A  friend made the ones from Vegan Cookies Invade Your Cookie Jar and I was in love. Like a Ferrero Rocher in cookie form, AMAZING! Hunted around and used this recipe. Not sure if its the same one but the result matched. I used dark chocolate spread instead of the jam, just to complete the Ferrero Rocher feel.

Cherry Almond Muffins

Been meaning to try this VWAV recipe for a while. I used glace cherries since I’m not shelling out for fresh ones (if I could even find any). They’re delicious, like a cherry bakewell muffin, which is exactly what I was hoping for. They’ve stuck to the cases though, gah. Anyone got any tips on stopping this? Last time I used my silicone muffin tray but they came out really weird. Next time I’ll try oiling the cups maybe.



Healthy Brunch

Well, a lot healthier than our usual processed sausage type brunch anyway.

Sweet potato hash with five spice and watercress from VWAV, simple lentil dish, seeded batch toast. Mmm. I also made the hash yesterday but got no photos. This time I added the potatoes first instead of the onion/garlic, since on the first go they ended up completely burnt. Other than that I liked the recipe. The lentils are just canned, added to sautéed onion and garlic with a bit of soy and lemon juice. So simple but really satisfying, can see myself going to this when need something non trashy but have no time to cook properly.



Chocolate Thumbprint Cookies

I got a late night baking urge yesterday, and with it being the VWAV week of cookbook challenge I had a thumb through there. Turned out I had all the ingredients to make the chocolate thumbprint cookies, so that settled it.

They weren’t supposed to crack, but as you can see, mine did. Not sure why that is, I used damp hands when forming them like it said. Anyway, they taste pretty damn good and were really easy to whip up.
