Nice Buns

Coconut buns using this vegweb recipe. Came out lovely! For the icing I just mixed a couple spoons of coconut milk with icing sugar instead of going the buttercream route. The sprinkled on some dessicated coconut. I made the mistake of leaving these (there were more than in the photo) out with a help yourself note, when I got home there was one left! Well at least sometimes I’m an okay housemate.

Hazelnut butter cookies

Was craving a cookie baking sesh, decided to go simple rather than the chocolate loaded ones I usually go for. I remembered the bit of hazelnut butter I had left and used it in place of the almond butter in this recipe from Love Like A Vegan.

Really tasty and not too over the top. Sort of digestive-y. Will definitely use this recipe again with other nut butters.



Salad?!

You can probably tell I’m not the type to get excited about salad, but I loved this so much I ate it 5 days in a row. I’m now sick of it, but that’s my fault. Cheap salad mix with the maple mustard dressing from Vcon and Tai Fun smoked tofu (not cheap, but so good!). The dressing recipe is really simple but turns some pretty boring leaves into awesomeness. Try it!

Peshwari Naan

I’ve been meaning to try making naan for ages, all the bought vegan ones I’ve tried have been absolute rubbish. Seeing this recipe from the Lustrous Musings blogĀ  finally got me excited enough to do it.

My technique could probably do with some perfecting but wow! Actual good naan bread, so good to have it back! This tasted just like the ones I remember enjoying pre-veag at curry houses/takeaway pig out fests. Much easier than I thought it’d be and works out really cheap, specially if you’ve got a bit of yogurt leftover from something else. Think the black onion seeds do make it unmistakably naan-y so try and use if you can – I got a big pouch for 60p.

I used the gas flame cooking method, with a Poundland splatter guard as my wire mesh. Worked with no problems, as long as you don’t mind a bit of burn smell. Good old Poundland!



Grove Cafe, Leeds

Went to a gig in Leeds the other day with the amazing added bonus of VEGAN PIZZA! Seriously, punk and pizza. What more could a girl want? Ok, cheap horrible booze concoctions, we covered that too.

The Grove is a little place on Cardigan road (not far from the cardigan arms which is where we were) which does lots of curry dishes as well as the pizza in question. I went for the ‘soya delight’ (can’t say no to tofu) but the real star was the ‘noon’ which had a thick layer of gorgeous garlicky spinach topped with peppers, aubergine and vegan cheese. You don’t get much cheese, but really you don’t miss it, or you can order extra (50/70p).

I didn’t have my camera with me but I’ve attempted to recreate something similar…

Pre-oven shot since I’m baking at Ste’s once he gets out of bed. The spinach mix was gorgeous on its own, can’t wait to taste finished product!
