Kale Mallung and more…

Amazing Kale Mallung recipe from Fat Free Vegan. Kale, red onion, chili, shredded coconut and lime. Simple but so tasty, I’ll definitely be cooking with shredded coconut more – it makes everything so good. We had this with rice and Masala baked tofu from AFR (v nice, next time will make double batch for sarnies) but I’d be happy with just a huge bowl of this.

Quick salad with the low fat tahini dressing from FFV again. Cous cous, carrots, chickpeas and to ruin the alliteration, spinach! Dressing is great and uses ingredients I’m likely to have around.

Cheesly and “ham” toastie. Awesome! Its not usual that I’d have cheese and ham around but we’d had ham and pineapple pizza the night before. I waited til home alone to make these so I could have two. Mean? Yes, but delicious.

Chili from Vegan Diner. Was nice but don’t think stood out compared to usual non-recipe chili. Was quite a big batch so used some for chili dogs, yum!

Its been ages since I’ve posted, various reasons, nowt too interesting. But I’ve moved house, and its great! Been enjoying having the kitchen to ourselves and actually having a table to eat at, woohoo! Here’s a few things…

Hottie black eyed peas and greens from AFR. Really tasty, def make again. Ste’s not much into hkale so got this all to myself.

Junky but tasty pre-drinks tea, burger with corn, pineapple and hot sauce on mine.

Ste’s shepherd pie. Perfect for rainy evening before a night shift.

Quick bean salad.

A friend gave me a copy of Vegan Diner as a housewarming present, great! Tried out a few things so far, I’ll have to finally order some vital wheat gluten I think. Lots of seitan recipes that look great in there.

Big Fat Greek Scramble, so good! Modified a bit to fit what I had on hand, probably best scramble I’ve ever had.

Lemon Diner Cheesecake. Photo doesn’t convey how absolutely delicious it was. Seriously, amazing. Did use 2 tubs of tofutti cream cheese though so you’re talking about 7 quid to make, yikes. Was for friends round though so worth a treat. Also made the philly sliders, but no photo. Really nice, although I used shop bought seitan so probably not full effect. Was my first go using cashews in a cheezy sauce, look forward to trying more.
