Amazing Kale Mallung recipe from Fat Free Vegan. Kale, red onion, chili, shredded coconut and lime. Simple but so tasty, I’ll definitely be cooking with shredded coconut more – it makes everything so good. We had this with rice and Masala baked tofu from AFR (v nice, next time will make double batch for sarnies) but I’d be happy with just a huge bowl of this.
Quick salad with the low fat tahini dressing from FFV again. Cous cous, carrots, chickpeas and to ruin the alliteration, spinach! Dressing is great and uses ingredients I’m likely to have around.
Cheesly and “ham” toastie. Awesome! Its not usual that I’d have cheese and ham around but we’d had ham and pineapple pizza the night before. I waited til home alone to make these so I could have two. Mean? Yes, but delicious.
Chili from Vegan Diner. Was nice but don’t think stood out compared to usual non-recipe chili. Was quite a big batch so used some for chili dogs, yum!
