Vegan MoFo Day 30 – Night Shift Pack Up

Some people on nights don’t eat, but to me having things to nibble on every hour or so can hold off the sickness and aches. If I leave it too late then my body feels it doesn’t want to eat, which then leaves me feeling like I’m dying. I usually don’t finish everything I bring but nice to have a choice –

Leftovers (today is a rather sad rice and slaw), PB&J sandwich, alpro dessert, granny smith and some green tea bags (there’s normal tea and coffee at work but sometimes gets too much).

One day of MoFo left, has been great reading so many awesome blogs!

Vegan MoFo Day 29 – Snacks, or Cool Packaging

Nothing great to post today, bad night shift, sleep, and now I gotta go do it again. So, here’s some snacks we bought last week.

Ste got this seaweed, check out Cartman-esque character dying from the spice! I hate seaweed, I want to like it, but its just so gross. Tastes like stinking beaches to me, ugh! I gave it a go, hoping that the hot & spicy flavour might make it edible. Nope, still disgusting! I even had to hide the packet because I kept thinking I could smell it everywhere. Sorry seaweed fans! Ste liked it though.

I went for this noodle snack that comes in an awesome medicine pot style container.

Yum! Like noodle crack. Broken up salty, sugary, MSG-y noodles. Somehow I’ve managed to make them last til now, although I probably could’ve downed the pot in one (its the right size to pour direct into your mouth!), and then lost my tastebuds for a week due to the salt.

Vegan MoFo Day 28 – Chocolate Hazelnut Biscotti

I don’t think I’ve ever tried biscotti before, but after drooling over some picture on the MoFo reader I thought I’d give them a go. I decided on the chocolate hazelnut ones from Veganomicon, how can you go wrong with that combination.

Vegan MoFo Day 26 – Non-rainbow vegan

If you relax your eyes this photo just turns into one beige-y mass. Lets just say thats because of my plate and chopping board, cos the food is delicious!

I bought Vegan Soul Kitchen a week or two ago and this my first go at making anything from it. There are loads of great sounding recipes in here, I went with simple ones due to work and having veg that needs using up, but I’ll be trying more adventurous ones soon! This is the Cumin-Cayenne Mashed Potatoes with Caramelized Onions and the Spicy Smothered Cabbage.

Making the mash must’ve been my first time really caramelizing onions! Like little raisins! Usually I get impatient and think “yeah thats done” or just end up with them being burnt. Ste is the no 1 mash fan so def will be making again when he’s back. The cabbage is lovely spicy-sweet and really quick to make.

I originally intended to serve this with the Rosemary Tofu Cubes, but I’m trying to use up whats in before spending more. I’ve photographed them alone but will eat with some LMCs after work tonight. Will probably daydreaming about it all shift!

Vegan Mofo Day 25 – Awesome Sandwich

Yesterday I picked up some of this Dragonfly smoked tofu as it was reduced. I love smoked tofu so have been tempted to try this before, but the small size and big(ish) price has always put me off, this was the perfect excuse to give it a go.

I dry fried it and put it in this badboy.

Poshy olive bread, cheesly (put on the roll in oven to get nice and melty), smoked tofu, tofu sour cream, and sauteed peppers and onion. Yum! I always want sandwiches like this but can never justify buying all the ingredients just for a sandwich. This time everything came along at the right time – the bread and veg (was a fajita veg bag) were both from my dad (past their sell by goodies), cheesly leftover from nachos, sour cream leftover from burritos and the tofu on sale. Great!

Verdict n the tofu – while it was really nice in the sandwich it wasn’t all that smoky. I might buy it again for this price but full whack I’d rather pay a bit more and get the Tai Fun stuff. Has anyone tried the other Dragonfly stuff? I half-remember trying the soysage stuff years ago and finding it pretty meh.

Also! The awesome Retro Vegan has very kindly picked me as a Liebster Blog! The idea is to pass it along to 5 blogs with less than 200 follwers. Well, every blog I was thinking of has already been given it! And, I have no idea how many followers they have. But giving no love would be mean so here’s some recommendations anyway. Some old favourites (old meaning probably discovered last MoFo!) and others new to me –

vegan.in.brighton

Tea and Sympatico

Vegan… but not scary

I’ve found lots of great blogs through the MoFo reader but then forgot to bookmark or subscribe, doh! Anyone got any UK blogs to recommend?
