Vegan MoFo Day 22 – Not too sweet and sour

This looks like an amazing meal! I would love to know the recipe.

I made the sauce by frying a couple of chopped spring onions, about a tbsp each of minced garlic and ginger til fragrant, then added 3/4 cup pineapple juice, 2 tbsp sugar, 2tbsp rice vinegar, 2tbsp soy sauce and a tbsp sambal olek for a bit of spice. heat that up then add a cornflour slurry to thicken it up. In a wok I’d stir fried deep fried tofu, onion, peppers, pineapple, bean sprouts and some bamboo shoots (just everything that needed using up). Add the sauce to the veg, heat through and enjoy!
