Chickpea Stew with “Lamb” Meatballs

I actually made something from a paper! I’m always tearing ones out, but never follow through to cooking it. Somehow this Hugh Fearnley Whittingstall recipe managed to break the trend.

The stew itself is vegan (if you use the veg rather than chicken stock), and for the meatballs I copied Ste and used asda burger mix with plenty of mint. Verdict – delicious! I added a bit more spice than the recipe, which tasted perfect, but was overpowered once the meatballs were added in. So next time I’d use even more. Also I used frozen spinach rather than fresh, I’m trying to make room in our shoebox size freezer compartment.

HFW has done a meat-free book and series, I’ve only seen one episode and probably won’t buy the book, but I wouldn’t mind trying some of the recipes here.
