Black Beans

This is my first time trying black beans, they aren’t so common here but I knew I needed to try em after seeing them pop up in Viva Vegan so often. I made the Venezuelan style black beans, and love them! Mild, but still flavorful, kinda sweet, perfect comfort food! Can beans be comfort food? I don’t know, but I say they are.

Also made the fresh tomato salsa with roasted chiles. Very good! I never usually bother with salsas, put off by the shitty supermarket ones, but it really completes the meal. Look forward to trying out more!

PS. that’s just a small plate put together to photograph. Gonna make the orange mojo tofu to go with it later, and have at least double the amount of beans, rice and salsa. Nom!



Drunken Beans with Chorizo

Last week I bought dried pinto beans (not as common here in the UK) to use for Viva Vegan recipes. I decided to go with the Drunken Beans with Chorizo. I used the redwoods chorizo instead of the seitan recipe since I don’t have vital wheat gluten, and left out the tequila, I’m not buying a bottle to use one spoonful! Maybe if I actually liked drinking it…

I know the photo looks a little dogfoody but it was really good! My first time cooking dried beans (!) and roasting chilis. Definitely be doing both again. I’ve never thought of roasting chilis myself before but they get well smokey and awesome. I was gonna make one of the viva vegan rice recipe to go along side but decided to make a quick cornbread for a change. Used the recipe from Hot Damn and Hell Yeah, but I used cornflour slurry as the egg replacer so ended up pretty dense and dry. Still, tasted good covered in beans!
