Day off today so I lazed in bed thinking about how to use some pumpkin up. And then thinking I want some breakfast. Combine the two: pumpkin french toast! This was so fucking tasty, even though my bread was pretty useless. Cheap thin white stuff that wanted to fall apart as soon as hit the pumpkin mix.
Maybe its partly cos I haven’t had any french toast in years, but I loved it!
What else do you do on a lazy cold day off? Make soup! This was bits of what I had left… onion, potato, carrot, sweet potato, pumpkin with garlic, ginger, chili and a wee bit of creamed coconut melted in at the end. Mmmm, warming tasty amazingness.
Well thats lunch/supper/whatever sorted for a few days. Thankyou soup!

The french toast looks really good! Maybe I’ll make some with all the pumpkin I have in the freezer. Did you use the recipe from Vegan Brunch?
Comment by Fanny November 3, 2010 @ 6:40 pmYou totally should! Wish I had VB. mine was just pumpkin puree thinned out with a bit of soy plus brown sugar, cinnamon, ginger and nutmeg. Maybe something else would’ve kept it on the bread a bit better!
